I recently landed my first full-time position! I love it so much, and I really feel like I am starting to become one of those real a d u l t s. With that being said, I suddenly have a lot of adult bills, and I have my adult health to worry about now, too. Gone are the college days of constantly frequenting Barbaritos. Now, I make my own meals nearly everyday, and I am starting to reap the monetary and health-related benefits! I also make enough food for dinner every night so that I have enough leftovers for the next day’s lunch at work, so that’s even more saving.
So, here is a list of all the meals I made last work week. Maybe they will inspire you to get cooking, too!
Monday: Vegan Mac n Cheese with Tofu and Broccoli
I tried to take a cute picture of this, but I soon learned that the lighting in my kitchen isn’t the most flattering at night for food pictures. The rest of the pictures featured will be pictures of leftovers reheated at work for lunch, as they ended up looking nicer! Anyways, the mac n cheese recipe came from Thug Kitchen 101, and it’s one of my favorite recipes. I especially love the breadcrumbs on top! I fried the extra-firm tofu in olive oil, garlic, soy sauce, and nutritional yeast.
Tuesday: Hot and Sour Soup
This recipe was also taken from Thug Kitchen 101. This soup is flavorful and also pretty healthy! My favorite part is the bamboo shoots.
Wednesday: Cauliflower Sesame Chicken with Chickpeas and Rice
A lot of people at the office told me that this meal smelled really good! I found the cauliflower recipe from the site Yupitsvegan.com. Here is the link to it: https://yupitsvegan.com/sticky-sesame-cauliflower/ . I seasoned the chickpeas with olive oil, salt, garlic powder, and chili powder. My boyfriend was a huge fan of the chickpeas!
Thursday: Lasagna and Broccoli
This was definitely my favorite recipe of the week, which is good news, because I made so much that I ate it for the remainder of the week! This lasagna recipe is again from Thug Kitchen 101. What can I say, I’m truly a fan! I seasoned the broccoli with salt, pepper, garlic, basil, and oregano.
